Authentic New Orleans Red Beans & Rice
As this is officially My First Blog Post, I have to make it a good one and go with the one that everyone ask me the most to make, Well one of the most, hard to say which is the top of the list.
As you Can see by the Title and probably from the Photo as well, I am going with my hometown tradition, one that every single woman in my house should know how to make and that is the Authentic Red Beans & Rice Recipe. So today you get it, you get what everyone loves for me to make. The Best part is, you can throw most together the night before, hit the crock-pot for 6 - 8 hours and off you go!
1 Bag of Dried Red Beans
1 Green Pepper
4 Celery Stalks
1 Kielbasa Sausage
1 Smoked Hamhock
3 Garlic Cloves or 1 Elephant Garlic Clove
3/4 lb. smoked ham, diced, for seasoning
2 Bay Leaves
1/2 - 1 Tablespoon hot Red pepper Flakes (to taste)
1 Tbspn Creole Seasoning
4 Cups White Rice
Green Onions & Fresh Parmesan Garnish (Optional)
Serve with Warm French Bread
Soak Beans in Water Before you go to bed (will be double if not triple the size by morning.
In the Morning transfer to a slow cooker with at least 2-3 Inches of water above the beans and the Ham-hock. (If leaving for a full day put on low and only 6 hours (turn back on to high when you come in)
If you will be monitoring this, just stir every hour to keep it from sticking to the bottom.
Once the Beans are nice and soft, Remove the Ham-hock and transfer 1/2 the beans to a flat bottom bowl and get a potato masher and work those arms! Mash until a nice thick Paste forms. Then transfer back the to beans and stir in, then transfer head to medium.
While this is cooking Chop up the sausage in either 1/2 inch thick pieces or you can cut them into 1/4 pieces like I do. I do this because it distributes the sausage better and doesn't leave people behind without any.
This is the traditional way to fry it up
and this is how I do it
Either Choice just drizzle a little evoo into your pan and then cook until golden brown and crusty. Then transfer to a paper towel covered strainer rack.
use the Same Pan and add in the Chopped Onion, chopped green pepper, Chopped Celery and garlic and cook on medium heat until translucent. Add in the Meat, Creole Seasoning, Pepper flakes and Salt & Pepper to taste, then add to slow cooker, add in chopped ham and bay leaves.
Cook the white rice to al dente, Heat up or cook the French Baguette and cut into serving pieces.
Add White Rice to Bowl (1/4-1/2 cup)
Top with Red Beans & Rice
Garnish With Chopped Green Onions & Fresh Parmesan if Desired.
