Coconut Banana Fritters with Peanut Butter & Chocolate Sauce

A Childhood favorite that has me making them now for my kids is only fitting for a fresh summer treat! The only difference is I added a twist to my childhood favorite. All my followers know my love of bananas and this month I plan to make tons of different tasty treats for you.

This simple yet delicious treat gets the coming back for more each time, even my picky eater Noah devours these bad boys. Best part is they are simple and healthy but taste like a yummy dessert.


  • 1 cup all purpose flour

  • 1/3 cup rice flour can or you can use regular flour

  • 2 teaspoons baking powder

  • 1/2 cup canned coconut milk

  • 1/2 cup sweet shredded coconut

  • 1 cup beer of your choice

  • 1 bottle of Peanut butter sauce

  • 1 bottle of chocolate sauce

  • 6 firm ripe bananas

  • zest of 2 limes + more for serving optional

  • frying oil, I prefer canola


  1. In a large wide bowl, combine the flour, coconut, rice flour (or all flour) and baking powder. Stir in the coconut milk and beer. If the batter seems thick, just add more beer to thin it out. It should be thick, but thin enough to pour.

  2. Heat a deep pan of oil over medium heat. Stick a bamboo skewer through the middle of each ripe banana. Dip each bananas one by one through the batter until thick but evenly coated, then place in the hot oil. Fry for 2-3 minutes on one side, then flip, Fry until golden brown and crispy. Remove the fritters and drain on raised cookie rack with a paper towel underneath. Repeat with the all bananas and then sprinkle each fritters with lime zest and more coconut if desired.

  3. When ready to serve, dust the fritters with confection sugar, then with drizzle with peanut butter sauce and warm chocolate sauce and serve with lime wedges.
