Crispy Toasted Coconut Onion Rings

I am so excited to be partnering with Vidalia Onion to bring you some great recipes this month! Today it is our Crispy Toasted Coconut Onion Rings that me and the kids made and enjoyed. They enjoyed them so much we ate the plate clean and they are already asking for me to make them again. So I will share with you the secret to making these to where even a kid who doesn't like onions will still eat them.

We even made a orange marmalade dipping sauce that was a huge hit and made these onion rings really pop.

Vidalia Onions are a Seasonal treat with a limited availability. The are only available from April through August of each year, so Get to cooking!

PREP TIME 10-15 minutes

COOK TIME 4-6 minutes

What you will need:

  • 1 container of canola oil

  • 1 large sweet Vidalia Onion, sliced into rings

  • 1/2 cup panko breadcrumbs

  • 1 cup all purpose flour

  • 1/4 teaspoon garlic salt

  • 1/4 teaspoon salt

  • 1/8 teaspoon pepper

  • 1 teaspoon cayenne pepper {optional}

  • 2 Large eggs

  • 1/2 cup milk

  • 2 cups sweetened coconut flakes


Fill a deep frying pan with 2 -3 inches of canola oil. Set the burner to medium heat. You will want your oil to be between 285 - 300*F. While oil is heating up, slice onions into rings and set aside.

In a bowl mix flour, garlic salt, salt, pepper & cayenne pepper. Mix it up well and set to the side.

in a second bowl mix panko and coconut flakes and set aside.

In another bowl mix eggs & milk together.

Set a cookie cooling rack on top of paper towels and set to the side of the pan on the counter.

Take each onion ring and dip into the egg mixture, then flour mixture then, panko mix. Repeat again then set on a plate to allow this to cling to the onion rings.

Do all of the onion rings until the onion is gone.

Oil should be nice and hot but now, but to test it, I placed a thermometer in the pot to make sure it was above 300*F (another trick is to use a wooden spoon and dip it into the oil, if it starts to boil around the spoon it is ready) if the oils is way to high, remove from heat and allow it to cool down. If oil is too hot it will burn your coconut before your onion rings actually cook.

Place onion rings into the canola oil one at a time, make sure not to over crowd as you will need to be able to turn them. Cook each side between 2-3 minutes then move to your cooling rack.

Allow the onion rings to cool off for at least 2 minutes then serve with Orange marmalade dipping sauce (1 jar of orange marmalade mixed with coconut milk, mix a few drops in at a time until thin enough to pick up with an onion ring.

Devour and Enjoy!

Vidalia Onions compliments many dishes. These onion rings are a great side to a cheese burger or hot dogs or even all by themselves. They are great in any breakfast dish as well as anything you plan to make for dinner.
