Beef & Pepper Shish kabobs
One of our families favorite summer meals is our grilled Shish Kabobs. The secret is in the sauce, no doubt in that at all. I have made these all kinds of ways as a food blogger, but we always come back to my recipe for the best version of these.
What you will need:
a Grill Obviously, LOL I use charcoal always and this is the one I use
You will also need Skewers, you can use
Chicken or Steak ( I have used both)
3 Large Green Peppers
2 Large Sweet Onions
1- 2 Containers of Large Cap Mushrooms
1/2 c olive oil
1/2 c red wine vinegar
1/2 c medium dry sherry
juice of 2 lemons
3 tsp ketchup
1 medium onion-chopped
2 tbsp parsley-chopped
1 tbsp fresh mint-chopped
1 tsp rosemary
1 tsp white pepper
1 tsp paprika
1/2 tsp sage
1/2 tsp chili powder
1 tbsp salt
coarsely-ground black pepper to taste
Make the marinade using ingredients above.
Cut Meat into large size cubes.
Clean and cut Onion into 4 sections
Clean and cut Peppers into bite size pieces
Soak all of the above in the maranade for no shorter than one hour before cooking, (best if done over night)
Prepare grill until the coals are nice and red but no longer a fire. Start layering the Skewers with Meat, Mushroom, Onion, Pepper, then repeat until each is full.
Cook until chicken is fully done or steak is desired temperature inside.
I serve this ever single time with Zatarain's Yellow Rice and a fresh spring salad.
