Cashew Almond Puff Pastry - Artisana Organics

Desserts are our favorite thing to create! So, when we were asked to try out Artisana Organics Cashew butter, I knew we had to create a one of a kind pastry that would make you want to make and create more desserts with this amazing treat!

So, everyone knows that as soon as I hear that someone wants to collaborate with me, I get all excited, but more so when it is something raw and organic for me to play with. As soon as I was told it was cashew butter, the wheels started churning. I was so excited to try a puff pastry with just a few simple steps that anyone could do this.

Izzy will give the short version on her video, I will give the more in depth alternative, depending on if you are a novice or a chef in the making, you can try whichever you would like.


What you will need:

1 package Puff Pastry Dough

1 Jar of Cashew Butter

6 Tablespoons of butter

1/2 cup powdered sugar

1/2 cup packed brown sugar

1/4 cup chopped cashews

1/2 cup sliced almonds

2 teaspoon vanilla

6 tablespoons 1/2 & 1/2 or whole milk



What to do:

Pull out puff pastry and let it thaw overnight.

empty one cup of Cashew Butter into either a mixing bowl or a food processor. Add in 2 tablespoons of butter, brown sugar, chopped cashews, 1 teaspoon vanilla extract and 1/2 & 1/2 until smooth and creamy filling forms.

Once you have a good pastry filling, cut each corner off of the pastry sheet and then cut 8-10 slices on each side leaving a nice center area for the filling.

Spread filling down the center then fold in both ends. Take the slices and fold in on each other to form a basket weave.

In a sauce pan heat the 1-1/2 cups confectioners' sugar, 1/4 teaspoon vanilla extract and

5 to 6 teaspoons milk until thick and creamy drizzle forms.

preheated the oven to 350 degrees and place pastry that has been brushed with 2 tablespoons of butter and sprinkled with the almond slices and place into the oven.

Cook until golden brown, about 18-22 minutes.

Immediately pour vanilla drizzle on the top of the pastry and serve. OR dust with powdered sugar and serve.

In our house we do both, we cut them into long pieces and drizzle half with powdered sugar and the other half has the vanilla drizzle, I love it both ways.
