Chicken & Dumplings
Chicken & dumplings are a meal worth praise, and a definite favorite at our table here at home. If you're reading this, chances are you're looking to try it out yourself, or maybe just looking for a different take on the classic! Either way, I'm confident you'll like what's in store. Read below!

What you will need:
1 1/2 pounds chicken breast tenders
1 tbsp olive oil, 1 turn of the pan
2 tbsp butter
1 potato, peeled and diced
1 onion, chopped
1 rib celery, chopped
1 bay leaf, fresh or dried
Salt and freshly ground black pepper
1 tsp poultry seasoning, 1 tbsp
2 tbsp flour, a handful
1 quart chicken broth or stock, canned or paper container
1 small box biscuit mix
1/2 cup warm water
Handful flat-leaf parsley, chopped
Dice tenders into small, bite sized pieces and place aside.
Place a large pot on stove over medium high heat. Add oil, butter, vegetables and bay leaf and cook for 5 minutes, stirring frequently. Season mixture with salt, pepper and poultry seasoning. Add the flour to the pan and cook another 1-2 minutes. Stir the broth or stock into the pot and bring to a boil. Add chicken to the broth and stir frequently.
Place biscuit mix in a bowl. Combine with 1/2 cup warm water and parsley. Drop spoonfuls of prepared mix into the pot, spacing dumplings so they don't stick together. Cover pot tightly and reduce heat to medium-low. Steam dumplings for about 8 to 10 minutes. Remove cover and stir chicken and dumplings to thicken sauce a bit - do this frequently to allow heat to circulate. Stir peas into the pan, remove chicken and dumplings from heat and serve in shallow bowls. Serve immediately!
