Delicious Italian Stuffed Shells
This recipe is very simple and short, but don't let that fool you! It has a rich and lovely taste that will rival your preferred pasta dishes without a doubt! Read on, and taste for yourself!
Time - Preparation: 30 mins, Cook: 1hr - 1hr 30 mins total
What you will need:
1 (12 ounce) pack jumbo pasta shells
2 eggs (beaten)
1 (32 ounce) container ricotta cheese
1 lb shredded mozzarella cheese
8 ounces grated Parmesan cheese
1 tablespoon parsley (dried or fresh, chopped if fresh)
1 1/2 teaspoons salt
1 teaspoon ground black pepper
1 (28 ounce) jar pasta sauce
8 ounces chopped portabella mushrooms
Preheat your oven to 350 degrees F (175 degrees C).
Bring large pot of water to a boil (lightly salting the water is optional). Add the pasta shells and cook for 8 to 10 minutes or until al dente (just before cooked), and drain.
In the large bowl, mix your eggs, ricotta cheese, half of the mozzarella, half the Parmesan, salt, pepper and parsley until combined. Pack the cooked shells with the ricotta mixture and place in a 9x13" baking dish.
In the medium bowl, stir in pasta sauce, mushrooms and left over mozzarella and parmesan. Pour over the stuffed shells.
Bake in preheated oven 45 to 60 minutes, until edges are bubbly and shells are set.
