Elote ~ Mexican Street Corn
Take a delicious Fresh ear of corn, grill it, slather it with Mexican crema, then sprinkle it with cheese, lime juile and oh that so decadent chile powder and bam you have an Elote.
Every time I visit mexico it is one of the first things on my list to grab, the flavors just burst in your mouth. These street vendors have been selling these Elotes for decades.
My only other favorite is so similar that I have had people ask me if it is Elote, but it was just a bunch of things I threw together, like potato chips and lime juice, LOL
But here you go, this recipe is amazing and only takes about 20 minutes total to make.
4 ears of corn
1/4 Cup Dukes Mayonnaise or Mexican Crema
1/2 Cup Cotija cheese
Ancho chile powder (for sprinkling)
4 Long Wooden Skewers
1. Soak the Wooden Skewers in water for about 30-45 minutes (I do this while the grill is heating up)
2. Insert each skewer into an ear of corn and brush the corn with evoo and grill, turning until the corn is charred all over.
3. Brush the grilled corn with the Mayo or Mexican Crema and sprinkle with the cheese.
4. Sprinkle with chile powder and serve with a lime wedge.
Even the kids will ask for seconds.
