Fox Family Potato Salad Recipe
This is one of our favorite dishes to bring to BBQ's or school functions as it is a hit each and every time and it will be a hit with your crew too, just follow the simple recipe below and make sure to watch the video for the actual technique of how to layer and fold all the ingredients in.
What you will need:
1 bag of baby red potatoes
1 bag of baby brown potatoes
1 Medium Vidalia Onion Chopped
1 egg for every 2 potatoes
1 pound of regular bacon

Green Onions for Garnish (optional)

boil potatoes until you can stick a fork in them without them getting stuck, but be careful to not overcook them. In another pot boil the eggs until they are hard boiled.
Chop up the onions and fry the bacon until crispy. Break the bacon into small bite size pieces and set aside.
Once everything is cooked and cooled down have them all in bowls around your main mixing bowl and start with carving up the potatoes as shown in the video, two at a time. Then one egg setting the yolk to the side. Then a handful of onion and bacon, 2 spoons of mayo then salt and pepper. Fold until mayo is mixed in well. Keep going until everything is gone. Taste when done to see if you need more salt or pepper then garnish with green onions if desired.
Refrigerate for at least 2 hours before serving. Enjoy!
