Homemade French Onion Soup

My Homemade French Onion Soup is one of my son's favorites and something he asks me to make often. It is one of those dishes you can throw into a crock-pot or a pot and walk away from for a few hours on simmer and it is ready to eat in no time. Super delicious and something everyone enjoys, especially as an appetizer for a dinner party.

Serves 8-10 | Prep Time 20 Minutes | Cook Time 90 Minutes


INGREDIENTS:

1/2 cup salted butter

3 Large Vidalia Onions, sliced

4 cloves minded garlic

2/3 cups Sweet Red Wine (Mercana Malbec Red Wine)

12 cups beef stock

8 sprigs of fresh thyme

5 Fresh bay leaves

4 teaspoons apple cider vinegar

freshly ground salt & pepper, to taste

French baguette slices - Cut into 1/2" to 3/4" slices

2 cups shredded Mozzarella cheese

2 cups shredded Gruyère or 1 slice per bowl of Provolone cheese


DIRECTIONS:

Start with melting the butter in a large pot or Dutch oven (which is what I use) over medium heat. Add in the onions and cook until golden brown and caramelized, around 30-45 minutes.* Stir in the garlic and stir pot for about 1 minute until it gives off a good aromatic scent.


Stir in the Mercana Malbec Red Wine, scraping all browned onion bits from the bottom of the pot.


Stir in the beef stock, thyme and the bay leaves. Turn up the heat a tiny bit and bring to a boil.. Once a good boil is rolling, reduce the heat and simmer about 20 minutes, stirring occasionally. You are looking for it to slightly reduce. Remove from heat, then remove the thyme sprigs and bay leaves.

Stir in apple cider vinegar then season with salt and pepper, to taste.

Preheat your oven to broil.


Put baguette slices on a baking sheet and Place into oven on broil until golden brown on both sides, about 1.5 minutes per side, pull out and set aside.


Divide soup into ovenproof bowls and place on a baking sheet. Top each bowl of soup with a baguette slice and sprinkle with cheeses. Place into oven and broil until golden brown and cheeses has melted and browned; about 2 - 3 minutes.


Pull out and let cool 3-5 minutes, then serve.
