Homemade Gooey Smores Cookies
One of my families favorites in the summer is smores. Izzy is so crazy about them, you will catch her starting up the grill just to make some, yes she does LOL
So today I thought I would share with you our favorite smores cookie recipe. This one is the best of 10 different attempts and this is the one that all my neighbors ask me the recipe for, so I am positive you will love it.
So here we go, and please tell me about yours as well.
What you will need:
Cookie Sheets (Best to have two, so you can have one ready while the other is cooking)
1+1/4 cups all purpose flour
1/4 cup finely ground graham crackers
3/4 teaspoons baking soda
1/2 teaspoon salt
1+1/4 stick room temperature unsalted butter
1 cup packed light brown sugar
1 large room temperature egg
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 cup milk chocolate chips or chunks
1 Container of Marshmallow Cream
1: Preheat the oven to 375 degrees
2: whisk the flour, graham crackers, baking soda and salt in a large mixing bowl
3: In your Mixer beat the butter and brown sugar until light and fluffy
4: add in the egg, vanilla extract and almond extract
5: Slowly add in the four mixture
6: Remove from Mixer and hand mix in the chocolate chips
7: Scoop out medium size cookies onto the parchment paper on the cookie sheet. Bake until golden brown around the edges about 12-15 minutes depending on the oven.
8: take a large spoon and put the marshmallow cream into a ziplock bag but shove only into one corner, then cut only the tip off. Once cookies are cooled pipe each cookie with a decent size dab of marshmallow cream on the top of each cookie.
For an added touch you can use a kitchen torch on the top of the marshmallow cream, but you don't have to.
