Kitchen Sink Zucchini Muffins

Going back to the bakery, here is my number one selling Muffing. The Kitchen Sink Zucchini Muffin is the muffin you will eat, EVER! Moist, sweet, packed with shredded zucchini, carrots, cranberries, walnuts, and spiced with vanilla, cinnamon and nutmeg. You'll smack your partner, good!

What you will need:

1: Food Processer

2: Large Glass Bowl

3: Wooden Spoons

4: Muffin Cups

4: Large Muffin Pan


  • 2 cups grated fresh zucchini

  • 1 cup grated fresh carrots

  • 1 Cup Fresh or Frozen Cranberries

  • 2/3 cup melted unsalted butter

  • 1 1/3 cup sugar

  • 2 eggs, beaten

  • 1 teaspoon vanilla extract

  • 1 teaspoon almond extract

  • 2 teaspoons baking soda

  • 1 Pinch of salt

  • 3 cups all-purpose flour

  • 2 teaspoons cinnamon

  • 1/2 teaspoon nutmeg

  • 1 cup walnuts

Crumb Topping:

1 Cup of Flour

1/4 cup chopped walnuts

1/2 stick melted butter


1 Preheat the oven to 350° degrees. In a large bowl combine the sugar, eggs, almond and vanilla extract. Run the Zucchini and Carrots throughthe Food Processer and Stir in the melted butter.

2 In a separate bowl, mix together the flour, baking soda, nutmeg, cinnamon, and salt. Stir these dry ingredients into the zucchini mixture. (Do not over-mix!) Stir in walnuts and cranberries.

3 Coat each muffin cup in your muffin cups with a little butter or vegetable oil spray. Use a spoon to distribute the muffin dough equally among the cups, filling the cups up completely.

4: Top with Crumb Topping

5: Bake on the middle rack until muffins are golden brown, and the top of the muffins bounce back when you press on them, about 20 to 25 minutes. Test with a long toothpick or a thin bamboo skewer to make sure the center of the muffins are done.

Set on wire rack to cool for 5 minutes. Remove muffins from the tin let cool another 20 minutes.
