Spinach & Bacon Stuffed Portabella Mushrooms
These have to be one of our favorite appetizer snacks to make, NOT only are they delicious, but they are gone in 30 seconds or less! You have to try this for yourself! This is one of those recipes that I found online but then twisted it into my own, so it is an original. The one I found (a long time ago, was spinach and Parmesan, I replaced it with things I thought would be amazing and boy was I right!
What you will need:
Pack of 2 Giant Portabella Mushrooms
Fresh Spinach Bundle
1 Cup of Fresh Grated Mozzarella Cheese
6 Slices of Bacon (Optional)
2 TBSP Butter
2 slices of Provolone Cheese
Cook Mushrooms in butter until water starts to seep and mushrooms start to get tender, a few minutes each side. Place on either a few paper towels to drain the water or a thick absorbent towel. Fry the bacon and set aside to cool, place other tbsp of butter in the pan and add in spinach (make sure to remove stems). Once the spinach is cooked down , place in a bowl and add in grated cheese and bacon bits and mix well! Stuff each Mushroom and place a slice of Provolone on top then broil until melted and browned just a little on edges. Let cool 5 minutes, then serve.
