Living in Las Vegas can be treacherous, especially in the summer months when the temperatures hit 110 degrees. So, staying hydrated is so important, so when the kids get hungry and try to reach for pretzels or chips that would only make things worse, I try to have a variety of healthy snacks, but mostly ones that will keep them hydrated.
Today's tasty treat was inspired by what was laying around in the fridge. Since I didn't want the strawberries to go bad and no-one was eating them yet, I grabbed those. Then the baby round watermelon was almost in the same condition on the counter, so that was a no brainer, especially since that is so juicy and will definitely accomplish the trick.
Popsicle's are one of the easiest things to make and Walmart in the summer has tons of bins of the plastic molds, very inexpensive, I may add.
I use yogurt a lot of times to, but mostly in the spring and fall, when hydration is not such an issue.
What you will need:
1 Cup Sliced Strawberries
1+3/4 Cups Watermelon (cut into cubes)
1/4 Cup Fresh Lime Juice (that is what I got from 1 and a half limes)
2 Tablespoons brown sugar (light is what I used)
a Pinch of Salt
1: Take your strawberry slices and put them inside the molds, For now just lay them in there, but when you are ready to pour the rest, you will want to try to lay them along the sides.
2: Combine the rest of the strawberries, watermelon, brown sugar, lime juice and pinch of salt in a blender or food processor and puree. Pour this into a fine sieve over a medium bowl and press on the solids to get as much juice out as possible, then throw away the rest of the solids that don't contain any more juice.
3: Pour the drained mixture into the molds and insert the sticks.
4: Freeze until Solid, Will take 4-6 hours (if unsure, go with the longer so they come out solid out of the molds)
