Vegan Red Beans and Rice

Cook Time - Preparation: 10 mins, Cook: 40 mins - Total Time: 2 hours 50 minutes
What you will need:
1 (16 ounce) package dry kidney beans
1 tablespoon olive oil
1 Container Mushrooms
1 green bell pepper
4 cloves garlic, minced
2 quarts vegetable broth
2 tsp Cajun seasoning
1/4 tsp ground thyme
2 bay leaves
2 packages of Instant Ready-Rice
Place kidney beans into a large container and cover with several inches of cool water; let soak for 2 hours.
Turn crock-pot on high; add olive oil and Mushrooms (sliced or button). Cook and stir until mushrooms are bursting with juices and browned, about 5-8 minutes. Add onion and garlic; cook and stir until onion is soft, 5 to 10 minutes. Turn off pot.
Drain beans and add to pot; stir in Vegetable broth, Cajun seasoning, thyme, and bay leaves.
Place lid on pot and cook, about 30 minutes. Serve beans over rice.
