Vegan Red Beans and Rice


Red beans and rice is a family favorite in my house! It's savory, thick, filling and accompanied with a little spice, and there's always plenty for everyone! Read the recipe here and share this lovable experience with us!


Cook Time - Preparation: 10 mins, Cook: 40 mins - Total Time: 2 hours 50 minutes

What you will need:

Ingredients:

  • 1 (16 ounce) package dry kidney beans

  • 1 tablespoon olive oil

  • 1 Container Mushrooms

  • 1 onion

  • 1 green bell pepper

  • 4 cloves garlic, minced

  • 2 quarts vegetable broth

  • 2 tsp Cajun seasoning

  • 1/4 tsp ground thyme

  • 2 bay leaves

  • 2 packages of Instant Ready-Rice

Instructions:

  1. Place kidney beans into a large container and cover with several inches of cool water; let soak for 2 hours.

  2. Turn crock-pot on high; add olive oil and Mushrooms (sliced or button). Cook and stir until mushrooms are bursting with juices and browned, about 5-8 minutes. Add onion and garlic; cook and stir until onion is soft, 5 to 10 minutes. Turn off pot.

  3. Drain beans and add to pot; stir in Vegetable broth, Cajun seasoning, thyme, and bay leaves.

  4. Place lid on pot and cook, about 30 minutes. Serve beans over rice.
