Watermelon Mai Tai
Going out with my friends is rare, but this one trip turned out to not only be profitable but super fun. The highlight of the whole evening was their seasonal Watermelon Mai Tai, I even convinced the girl behind the bar to tell me how to make one and I am doing it right after I post this.
I am not sure if what I am about to say is a good or bad thing, but these little bad boys will go down as if there are no alcohol in them at all, but they are loaded.
So basically your going to puree 1 cup of cut up seedless watermelon in either a blender or food processor.
Add in 6 tablespoons of light rum (she told me that coconut rum works super well too)
1/4 cup elderflower liqeur and the juice of 2 limes and superfine sugar a few tablespoons.
Serve over ice or crush the ice in the blender with the watermelon mixture and serve with a watermelon slice on the glass.
